Simple Vanilla Cupcakes

This is a simple basic recipe for vanilla cupcakes - you can vary the ingredients, icing and decorations to suit. This recipe makes 12, if you want to make 24, double the ingredients :)

For the cakes:

4oz/115g butter, at room temperature
4oz/115g caster sugar
2 large eggs, at room temperature
half tsp vanilla extract (or use one vanilla pod)
4oz/115g self-raising flour


Preheat the oven to 170C/325F/gas mark 3. Line a 12-hole cupcake tin with paper cases.
Beat the butter, sugar, eggs and vanilla until smooth.
Add the flour and carefully fold in.
Divide the mixture between the paper cases.
Bake for 15-20 minutes until golden and springy to the touch.


Ideas for fillings:

Lemon curd (Homemade or Duchy Originals do a good one)
Chocolate Spread (Marks and Spencer's Fairtrade Chocolate Sauce is to die for)
Raspberry Jam
Whipped cream, lightly sweetened
Cherries
Peanut Butter
Icing with hundreds and thosands sprinkled on top or sweets
Fresh Fruit
Chocolate Chips

  2. ok. this has nothing to do with the post itself but you told me on twitter that i could post my feedback here :) so here we go

    I have only discovered you recently, (someone tweeted about your nail polish giveaway) and I have enjoyed reading your posts ever since. I love that it's a a mix of makeup, fashion and cupcakes: the recipe for success and all that a girl wants. Now for the things I would love to see more on your blog:
    - an about me section, so that we can know more about you, your interests and the birth of this blog
    - a personalised banner
    - a menu as part of the banner (something like home, about me, disclaimer etc,) or something like that, do you know what i mean? like some people have on their website
    - a wider column for the main text
    - no frames around the pictures so that the pictures flow more seamlessly with the text (using windows live writer will not add default borders as blogger does)
    - a search facility
    that's it :)

  4. I did have a lady designing me a banner and has been promising to send it to me for that past 6 weeks now shes gone AWOL!

    yes also would like a menu - but not sure how to do that yet!? any help or suggestions welcome!

    Have just changed the layout this week to 3 columns and think the text in the middle has moved so need to work on that.

    yes would like a search box
